
The velvety texture of barley delight tempted you to eat before you finished your meal and ofcourse its healthy with the goodness of natural sweet jaggery and coconut . It can be one of the enjoyable dessert of vegetarian people or vegan who likes to avoid dairy products . I almost love to prepare it when i carve for anything sweet especially in the month of summer . It can be a gorgeous treat of any festival or celebration at home to serve gracefully front of your guest ..
In my family my mother is a picky eater ,whatever you serve she always find mistakes. Sometimes i feel not to cook ,but i always take her desire as my challenge of my culinary skill. This is one of her favorite because she always ask for second bowl when serves.

The month of May is one of the hottest month in Odisha ,India. U feel like burning to go outside . We just waiting for sunset to go out and buy our essentials . I always prefer home made sweets rather buying from market to avoid sweaty and humid weather . Barley is on of the summer cereal to keep your self cooling from the affect of harsh and balmy weather in the month of summer especial in Asian countries. Barley is not only rich source of fibre but also a great start your day with variation like barley water, roti ,soup dalia..My recipe contains broken pearl barley which takes less time to cook than hulled barley.
Barley delight is a simple recipe where you need to soak barley before cooking , so that it will be soften enough and reduce the cooking time. As shown in the picture wash the barley and soak them in enough water .I always prefer my small pressure cooker to boil ,but a heavy bottom pot also enough to boil barley. Always add water 4 times more water than the barley for boiling.

Once the barley get soft get jagerry powder and stir it untll dissoved. Always use coconut milk at the end to avoid curdlle. Pour the milk and cook on high flame for less than 1 minute .Off the flame and never forget to add crushed cardamom which will enhance the aroma of the dish.

Made with lots of dry fruits this dessert is a favourite of my near and dear . So easy and yet so scrumptious. I would suggest to skip the store-bought variety and cook this in the comfort of your home to enjoy in not only hot summer but also in all season.

Barley Delight
Equipment
- 1 Pressure Cooker heavy base pot
Ingredients
- 1/2 cup Barley broken pearl barley
- 1 cup Coconut milk thick
- 1/2 cup Jaggery as per taste
- 1 tbsp Ghee clarified Butter
- 1 grip Dry fruits cashews, almonds, raisins
- 4 to 5 pieces Cardamom crushed
- pinch of salt
Instructions
- Clean and rinse barley thoroughly. Soak them in 2 cups of water for 8 hours . Now boil the barley adding pinch of salt in a pressure cooker with out discarding the water for 30 minutes .
- After 30 minutes add little more water and cook on high flame. Stir it to avoid sticking to the base for 5 minutes.
- Now add jaggery powder when it will be dissolved evenly, add coconut milk. Stir on high flame for 1 minute. Off the flame. Sprinkle the crushed cardamom.
- In a small pan,, heat ghee along with dry fruits . Stir fry until the dry fruits are light brown. Pour and stir into the barley. Enjoy it warm or chilled . Sprinkle some dry fruits before serving .
Notes
- You can use sugar instead of jaggery powder .But jaggery gives not only a gorgeous look but also enhance the taste of this conventional dish.
- You can use cow milk ,khoya instead of coconut milk to make the dish more rich and creamy.
