Fava beans or broad beans — are green legumes that come in pods. This green flat amazing delight abundantly available in every local markets of Odisha. In common we call it as simba. They have a slightly sweet, earthy flavor and are eaten by people all over the world.

I am sharing flat beans with yellow mustard sauce the unique flavor of Odisha goes well with steamed rice.

INGREDIENTS

500g jhata/simba (flat beans)

250g brinjals

1 tomato

1 onion (chopped)

5 to 6 garlic pods(crushed)

½ tsp mustard seeds

½ tsp fennel seeds

Oil

salt

Mustard paste

2 tsp mustard seeds

½ tsp cumin seeds

2 to 3 dried chilies

½ tsp turmeric powder

Make a fine and smooth paste of the above for mustard paste.

STEP BY STEP PREPARATION OF FLAT BEANS

STEP 1

Remove ends and strings from the raw green beans  and wash them properly.

Wash brinjals and slice into wedges.

STEP 2

Now in a pot heat 2 tsp. oil, let it smokes. Add mustard seeds, fennel seeds when they splutters add onions, crushed garlic into it. saute it

STEP 3

Now add prepared mustard paste, fry them for 1 minute.

Add chopped tomatoes, saute for some seconds.

STEP 4

Add 1 cup of water and salt into it

STEP 5

Let it boil on high flame. Now add brinjals. Boil them for 1 minutes.

STEP 6

Add beans into the gravy and cook on medium flame until all the vegetables cook properly

STEP 7

The gravy should be thick for Flat bean / Simba Rai. Now off the gas and serve hot.
