A crispy and crunchy fritter made out of cauliflower stem and taro root  will surely win your heart especially people having vegan diet. A hit of platter dish for your garden party and healthy snack to cook at home.

All we love cauliflower most of the people use the florets and thrown away the leaves which has hide of nutrients, a great source of proteins inside of this flower beauty. Thanks to my grandma and her believe to use all the parts of veggies instead of throwing them. The leaves are completely edible and delicious. Leaves are used in stir fries and curry dishes especially in preparing food with out garlic/onion (Sattvic food) in Odia cuisine .

For the dish I just plucked the green leaves, chop and blend them. Instead of paste pulse into crushed to maintain the natural sweetness of the leaves on your taste buds.

All we know how taro roots are versatile in many cuisines. I have used large taro root to prepare the fritter, you can use small taros but it takes little time to grate than the large one. The addition taro with cauliflower leaves elevates the dish , offering different textures and flavour.

Clean cauliflower leaves. Chop them into small pieces.

Instead of blending to fine mixture, pulse it to form a slightly crushed mixture. The cauliflower leaves contains moisture  inside so in the time of mixing all the ingredients use less water or no need to use water.

While mixing all the ingredients, always add little oil into the mixture to make it more crisp.

Make small balls and flat it using a spatula or turner. Use little more oil and fry both the sides until crisp and brown both the sides.

Cauliflower Leaves ‘N Taro Fritter

yield : servings 8 fritters

prep time : 15 minutes

cook time : 10 minutes(for all fritters)

total time : 20 minutes

things we need to prepare

  • 6 to 7 cauliflower leaves
  • 1/2 cup grated taro root -large taro root
  • 2 tsp ground paste 
  • 1 tsp gram flour
  • 3 tsp rice flour
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric
  • oil
  • salt

ground paste

  • 1 small onion
  • 7 to 8 garlic pods
  • small ginger piece
  • 2 to 3 cloves
  • 1/2 tsp cumin seeds
  • 2 to 3 green chilies

Blend all the ingredients in a blender with little water and to form a fine paste


Snap leaves of cauliflower, wash them thoroughly and dry them.

Chop them and pulse in a blender to form a crushed mixture.

Clean and rinse taro root. Peel and grate it.

In a bowl mix both grated taro root, cauliflower leaves mixture and rest of all the ingredients. Add 1 tsp oil, little water(if needed) to form a thick paste. Keep it a side for 10 minutes.

You can add little more rice flour and gram flour to bind the mixture.

Meanwhile heat tawa or skillet , sprinkle 2 tsp oil over it.

Now make small medium balls of the mixture and place on hot tawa. On high flame ,turn the balls and flatten it using a turner or spatula. Sprinkle more oil. Cook on medium flame and fry the flatten fritters until crunchy and brown both the sides. Serve hot as it is or any side dish of your menu.
