My husband is a vegetarian. So i always try and love to cook different dishes for him using lots of veggies.This is one of my own recipe which i cooked for him and it turned out great.

INGREDIENTS

  • 8 button mushrooms
  • 20 Malabar spinach leaves(poi in Oriya)
  • 1 onion
  • Garam masala
  • 1 tomato
  • Turmeric
  • Chili powder
  • Salt
  • Oil
  • Water
  • Making Paste:
  • 1 onion
  • 1 garlic
  • 1 small piece ginger
  • 4 cloves
  • Make a fine paste of all of the above ingredients and keep them aside.

HOW TO PREPARE THE DISH

STEP 1

Clean mushrooms and slice them. Keep them aside

STEP 2

Clean and remove the stems, use only the leaves of the spinach. Cut them in stripes.

STEP 3

In a pan heat 2 tsp oil and fry mushrooms until light brown. Remove and keep them in a plate.

STEP 4

Heat 1 tbsp oil in the same pan, Add sliced onion,1/2 tsp turmeric,1/2 tsp chili powder. Saute them.

STEP 5

Add prepared paste, tomato slices..saute them until the masala leaves the side of the pan.

STEP 6

Add spinach, cook on medium flame for five minutes. Add mushrooms, garam masala Fry them well

STEP 7

Add 2 cups water, salt. Boil them on high flame. Then lower the flame, cook it until the leaves are cooked nicely and the gravy will be in thick consistency. Now off the gas and serve hot.
