This is another typical odia food.This must be one of your top list menu for Sunday lunch or party at home..The aroma of the curry must be boosted your appetite. 

This I could enjoy it with my steaming hot Dal and Rice. This  can be enjoyed a lot with Odia Pakhala Bhata .It can be savored with Dal and Rice.

 

  INGREDIENTS

  • ½ cup Malabar spinach stems
  • 150 gms shrimps
  • 1/4th cup each(taro root , potato cubes, pumpkin)
  • 2 tomatoes
  • 1 chopped onions
  • ½ tsp. mustard seeds
  • 1/4th tsp. (fennel seeds, fenugreek seeds)
  • 1 tsp crushed garlic pods
  • 1 tsp coriander powder
  • ½ tsp cumin powder

Making a paste for ghanto

Make a fine paste of the below ingredients

  • · 1 tsp mustard seeds
  • · 1/2 tsp cumin seeds
  • · 1 small onion
  • · 10 to 15 cloves garlic
  • · ½ tsp turmeric
  • · 2 dried red chilies

How to prepare the dish

STEP 1

Clean the shrimps nicely. Marinate them adding little salt and turmeric. Keep them aside for 15 minute.

STEP 2

Here I use only the stems of the spinach.You can use both the leaves and stems also. .cut them into small cubes.

I use the tender stems.which is easy to cook..

Cut all the veggies into small cubes.

STEP 3

Heat 1 tbsp oil in a pan. Shallow fry shrimps .Remove them into a plate.

STEP 4

Season mustard seeds a long with fennel, fenugreek seeds. when they start to splutter add green chilies, onion, garlic. saute for 5 second

Add coriander, cumin powder, garam masala fry them quickly.

STEP 5

Add tomato slices. Fry until they get soft. Now add mustard paste. Stir it nicely.

STEP 6

Add spinach stems, sauté for some time until get the aroma of the stems. Add rest of veggies except pumpkin. Fry them well

STEP 7

Add fried shrimps. combine all nicely.

STEP 8

Add 3 cups of water and salt.Boil them on high flame. Then cook it on medium heat.

STEP 9

Now add pumpkin when the stems are half cooked .Cover the dish and cook until all the veggies cook properly and get a thick gravy like structure.

Now  off the gas and serve with steamed rice
