This a simple and easy mix vegetable curry. In Odisha there are varieties of mix veg curries you will find. It depends on the vegetables we get in different seasons. Cow peas are abundantly available in the season winter. Ghanto is a most common dish find in every house hold of Odisha.

INGREDIENTS

  • 1 ½ cup red cow peas(boiled)
  • 1 cup chopped brinjals
  • 1 cup chopped yams
  • ½ cup baby potatoes (boiled)
  • 1 cup cauliflower florets
  • 2 medium size tomatoes
  • 1 onion (chopped)
  • 1 cinnamon stick
  • 1 tsp. red chili powder
  • ½ tsp. turmeric powder
  • 1 bunch of chopped coriander leaves
  • Garam masala

Preparing masala

  • 2 medium onions
  • 1 big head garlic
  • 1 small piece ginger
  • 4 to 5 cloves

Blend to make a fine and smooth paste of the above given ingredients for preparing masala.

Chop tomatoes and blend to fine paste.

LET’S PREPARE THE DISH STEP BY STEP

STEP 1

Wash and clean all the vegetables. Cut them into desired shapes.

Boil baby potatoes and peel their skins.

Wash and rinse cow peas thoroughly. Soak them with 2 cups of water for 8 to 9 hours.

Steam it in a cooker for 3 to 4 whistles. Off the gas and let the cooker cool naturally.

STEP 2

Heat 3 to 4 tsp oil in a pot, add one cinnamon stick wait for some seconds. Add chopped onions and fry until translucent.

Add red chili powder, turmeric and tomatoes into it.

STEP 4

Add prepared paste and fry the masala until raw smells goes off.

STEP 5

Add  tomato paste.Fry until tomatoes get cooked properly.

STEP 6

Add yams,peas and stir fry.

STEP 7

Add brinjals,cauliflowers and fry them well.

STEP 8

Add potatoes,Garam masala and roast the veggies well.

STEP 9

Now add salt,1 cup of warm water. Cook on high flame until the gravy starts to boil

STEP 10

Cover the lid and cook on shimmer for 10 minutes or until all vegetables are cooked nicely

Now off the gas and sprinkle coriander leaves.

Now ghanto is ready and serve with steamed rice or roti.
