The name enough to say that a popular odia street food.Combination of lentils,curd, and melange of spices makes the food delicious and healthy too.This is one of the best-est food in festive seasons specially in summer.

INGREDIENTS

For preparing dahi vada aalu dum we need to prepare dahi vada,aalu dum,Guguni and mango chutney

  1. FOR PREPARING AALOO DUM
  • 5 to 6 small boiled potatoes
  • 1 onion ( chopped )
  • pinch of sugar
  • 1 bay leaf
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • salt
  • oil

for masala paste

  •  1 onion
  • 1 tomato
  • 6 to 7 garlic cloves
  • small ginger
  • 4 to 5 cloves

Blend to make a fine smooth paste of the above ingredients for masala

LETS PREPARE STEP BY STEP

STEP BY STEP PREPARATION AALU DUM

STEP 1

  • Wash thoroughly and boil potatoes in a steamer.
  • Now peel them and cut into cubes.In a pan heat 1 tsp oil,fry potato cubes till light brown.

STEP 2

  • In a pan heat 2 tsp oil,add sugar when it turns brown add onions saute it.Add red chili power,turmeric powder and fry them.
  • Add prepared paste and fry till raw smell goes off.

STEP 3

  • Now add fried potatoes and garam masala. Saute it.

STEP 4

Add 2 cups of water and salt.Let them cook for 5 to 6 minutes .Now off the heat and serve them in a serving bowl.


2.PREPARATION FOR DAHI VADA

INGREDIENTS

  • 250 g black gram ( split husk black gram)
  • 1/4 th tsp baking powder
  • 1 cups curd
  • 2 green chilies
  • 1/2 tsp red chili powder
  • chopped coriander leaves
  • 1/2 tsp black salt
  • 1/2 tsp cumin seeds
  • water
  • salt

STEP BY STEP METHODS FOR DAHI VADA

STEP 1

  • Soak lentils over night.Wash them and rinse them well.

STEP 2

  • Blend them into smooth paste with  adding little water.
  • Now beat the batter for 1 minute in one direction,will heLp to make the batter fluffy and smooth.
  • You can test by dropping a pinch of batter in a bowl of water,if it floats then the batter is ready to vada else you need more time to beat the batter.

STEP 3

  • Now add semolina,ginger,soda,cumin seeds and salt into it.Again beat the batter and keep it aside for 10 minutes.
  • You can keep the prepared mixture in refrigerator for t 4 to 5 hours.Then use to fry will give you better result

STEP 4

  • Now pre-heat oil in a kadai/wok.
  • Apply some water  both of your palms , take some batter in your right hand from the bowl. Give it a round shape.make a hole in the center with your thumb. You can also use banana leaves or zip lock bags to give the vada it’s doughnut shape.

STEP 5

  • Now slide vada into the hot oil in medium heat.Once you dropped vadas make the flame high and turn over all the vadas.Now medium the flame and fry till golden brown both the sides.

STEP 6

  • Drain them in a bowl of water and soak for 10 minutes.
  • Now squeeze all the vadas smoothly between your two palms and drop it into the curd mixture.sprinkle some coriander leaves.

STEP 7

  • In another bowl add 1 cup curd and 1 cup water,add red chili powder,black salt,cumin powder,salt.Stir it nicely.

 3 .MAKING MANGO CHUTNEY

  • 1 raw mango
  • 5 to 7 sugar
  • 2 green chilies
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • water

  • Grind all above ingredients with a little of water and make fine smooth paste

PREPARATION DAHI VADA AALU DUM

  •  Sev (crunchy fried noodles)           
  •  cumin powder                                 
  • chili powder
  • chat masala
  •  chopped onions
