This sugary balls are always my favorite which my mother cook  on Holi.I always waiting for this delicious authentic sweet balls.Make this dish in your kitchen and relish with your family and friends on any special occasion.

INGREDIENTS

  • 1 1/2 cup yellow green gram(yellow moong dal)
  • 1 cup cottage cheese(paneer)
  • 1/2 cup almond mixture
  • 5 to 6 cardamom powder
  • 1 glass sugar
  • 1 glass water
  • 1/2 tsp saffron
  • salt

LETS PREPARE THE DISH STEP BY STEP

Soak yellow green grams in 2 cups of water for 5 to 6 hours.wash them and discard all the water.

STEP 2

Blend them with 2 cardamoms to fine smooth paste with out using water.

STEP 3

Soak almonds  in 1 cup of water for 8 to 9 hours.Remove the skins and blend without using water.

Now in a bowl,add fresh cottage cheese,prepared green gram paste,almond paste along with pinch of salt.mix them well.keep the mixture in refrigerator for 6 to 7 hours.

STEP 4

In  a pot mix together water,sugar,crushed cardamom.Boil on medium flame until get a sticky consistency.

If you get one string consistency then add some water,boil  for some seconds.Off the gas and keep the pot aside.

STEP 5

Now take out the mixture from refrigerator and whisk them well.

Now heat 2 cups of oil,drop one small ball of the mixture in the oil.if it rise up slowly then start to fry rest of the balls.

STEP 7

  •  If i rise up slowly then start to fry rest of the ball .
  • Make small balls from the mixture and pour one by one into the hot oil.
  • The flame should be high when you drop the balls.Turn both the sides quickly.

STEP 8

  • Medium the flame and stir it until get golden brown both the sides of the balls..

STEP 9

  • Place them in an absorbent paper.

STEP 10

  • Pour them into the warm syrup as quick as possible.Let the balls soak in the syrup.It will take 1 to 2 hours.sprinkle some saffrons and serve hot.
