Sajana / drumstick tree is a miracle tree.It’s natures boon to human world. Moringa/drumstick is believed to have many benefits and its uses range from health and beauty to helping prevent and cure diseases.
In odisha it is one of the popular tree to see in backyard of most of the houses. Luckily I have plucked some of the stems available in our backyard.You can buy the green leaves from local markets also.
Drumstick leaves/sajana saag/moringa leaves stir fried along with lentils is delicious and healthy too.In odisha it is one of the staple food goes well with steamed rice.
THINGS WE NEED..TO COOK
15 to 20 drumstick stems( 3 to 4 cups about)
One handful yellow moong dal
10 to 15 garlic pods
4 to 5 green chili (crushed..)
1 onion (chopped)
½ tsp mustard seeds
DIRECTIONS STEP BY STEP PHOTOS
· Drumstick stems has very thick sprig leaves. Collect always the tender leaves. u can discard the stems.
Leaves are always floating on water due to more iron in leaves. Rinse them and squeeze to keep in a bowl.
Rinse the dal thoroughly and boil them in a pressure cooker with ½ cup of water and little turmeric.Cook on high flame for 3 to 4 whistle and cool under running water immediately.Don’t wait to cool the pressure on room temperature.It will make the dal more sticky.We don’t need dal to over cook, keep them in a bowl.
You can also soak dal before steaming,so that it will save time and cook easily.
Here i have use moong dal,someone can take arhar/toor dal .But moong dal gives good taste to the dish.
· In a pan heat 2 tsp oil,let it smoked.Add mustard seeds ,green chilies,garlic,chopped onions. when all crackled and garlic turns light brown add leaves and combine them well.
· Now add boiled dal .
Add ½ cup of water and cook for 2 to 3 minutes over medium flame and serve hot with rice.
