This delectable recipe first time introduce to me from my husband who is a big fan of baby potatoes.He cooked for me .I have tried the same with some modification instead of frying potatoes ,I have boiled them. But the taste comes out great. you can relish this delicious dish with your family or friends which goes well any flat breads , naan, roti,paratha also any rice.

INGREDIENTS

  • 500g baby potatoes
  • 2 tomatoes
  • 6 to 7 almonds
  • 1 onion
  • 2 tsp. Greek curd
  • ½ tsp. coriander powder
  • ½ tsp. turmeric
  • 1 tsp. red chili powder
  • ½ tsp Sugar
  • Garam masala
  • coriander leaves
  • Oil
  • Salt

Making masala paste

  • · 2 onions
  • · 6 to 7 garlic cloves
  • · Small ginger piece
  • · 3 to 4 cloves
  • · ½ tsp. cumin seeds

Blend to make a fine and smooth paste.

Wash tomatoes, blend a fine and smooth paste.

Soak almonds for 4 to 5 hours and remove skins, blend a fine paste.

LETS PREPARE STEP BY STEP DUM AALOO..

STEP 1

  • Wash potatoes thoroughly and half boil them in a deep pan. When they are half done, off the gas. Remove skins of potatoes.
  • You should  prick the potatoes all over with a fork. so they can soak masala insides.

  • Now in a skillet heat 1 tsp. oil, gram flour, salt and fry half boiled potatoes for 5 to 6 minutes. off the gas .And keep them aside.

STEP 3

  • Heat 2 tsp. oil in another pan, add sugar when it turns brown add bay leaf, onions. when onions turn light brown add red chilli powder, turmeric.

STEP 4

  • Add tomato paste and fry them well

  • Add prepared masala paste and saute it until raw smell goes off.

STEP 6

  • Pour all the fried potatoes, coriander powder, garam masala and mix them evenly with prepared masala.

STEP 7

  • Now add curd and stir it .

STEP 8

  • Add almond paste, sauté for 1 minute.

STEP 9

  • Pour 2 cups of water and cook on high flame until boil.

STEP 10

  • Cover the pot in an airtight lid or use wheat flour to cover the lid. Shimmer for 8 to 9 minutes until all the aromas of masala locked in potatoes.

STEP 11

  • When it gets a gravy like consistency, off the gas and sprinkle coriander leaves, serve hot.
