An egg is an ideal example of having a perfect blend of nutrition and taste. Egg potato curry is one my all time favorite dish.Delectable crunchy fried egg combine with boiled egg damped in home made spicy gravy enhance the taste of egg curry.
It goes well with both rice and roti as well.
INSTRUCTIONS (STEP BY STEP WITH PHOTOS )
I always prefer egg to rinse before preparing for cooking.So first rinse it carefully and boil them in enough water for 15 minutes on medium flame.While boiling eggs i love to add some salt into the boiling water it helps to soft the shell and easy to peel shell of eggs.
Once done discard water and let it cool.Now remove shell of eggs.
Sprinkle some salt over eggs and prick different sides of eggs 2 to 3 times.So that eggs can soak the gravy nicely.
Heat 2 tbsp oil in a wok along with pinch of turmeric and fry eggs till golden brown all the sides.keep them aside in a plate.It’s better to cover the wok while frying eggs ,it will avoid spluttering eggs.
Wash potatoes and boil them.Peel off their skins.keep a side
Now again add some more oil and heat it.Add cinnamon,green chilies and bay leaf inside.When they change colour add chopped onions,turmeric,chili powder and saute it.
Add tomato ketch up.Fry them well on medium flame.
Add prepared paste and fry them until the raw smell goes off.
Add boiled potatoes ,coriander powder,garam masala and saute it.
Add 2 cups of water and cook on high flame.when gravy starts to boil add fried eggs.
Cook for 10 minutes more.Now off the gas and sprinkle some coriander leaves.Serve hot in a serving bowl.
