A traditional dip of middle eastern cuisine.It is made of boiled skinned chick peas Skinned chickpeas makes the dip more creamy ad silky.It goes well with stuffed pita bread or can be used in any fritters which i always love to do.

This recipe is so simple and healthy too with less ingredients.

so lets start ….

THINGS WE NEED TO PREPARE..

  • 1 cup boiled chick peas(skinned)
  • 1 small onion (optional)
  • 2 to 3 garlic cloves (fried)
  • 1/2 tsp cumin seeds (tossed or shallow fried)
  • 2 green chilies (fried)
  • 2 to 3 tsp lemon juice (can increase according to taste..)
  • 1/2 cup tahini paste ( if not available  can be used roasted peanuts..)
  • 2 to 3 pepper corns
  • paprika (garnishing)
  • salt

PREPARATION STEP BY STEP

STEP 1

  • Soak chickpeas overnight with enough water.In the morning discard and rinse well the chickpeas.
  • Boil them in a pot with 2 cup of water or in a pressure cooker over lower flame for 4 to 5 whistle or chickpeas are get soft.When chickpeas are cold enough ,gently squeeze to remove the skin of each chickpeas.

STEP 2

  • In a small pan add 1 tsp olive oil roasted fry garlic and green chilies..
  • In a small pan shallow fry cumin seeds,until get nice aroma.cool it aside.
  • Shallow fry sesame seeds and make a fine tahini paste using little water.If there is not available of tahini,you can use roasted peeled peanut seeds as paste.
  •  Place all the ingredients in a blender except lemon juice and paprika..Blend  the mixture until it becomes a smooth, creamy texture.You can use little water to make it thick.
  • Now add lemon juice of your choice and adjust the flavour.
