Jack fruit manda or jack fruit rice balls are steamed version of pitha which is called aslo odia style modak pitha.Its made out of rice flour stuffed with jack fruit .These balls are one of our staple food when Rajo comes(a swing festival of odisha).
Though the season of june where ripe jack fruits are peak sale.When there are enough ripe jack fruits to eat, we relish them prearing different pitha and dessert to enjoy the seasonal fruit.
Preparing stuffings i would suggest you should fry both jack fruit and coconut nicely else it will give an unpleasant smell.
If you want to relish the taste of the pitha,then use home meade rice flour.It enhance the taste and rice balls are come out perfectly.
Boil water in a pot ,pour rice flour into the pot.Dont stir the rice,leave it as it is and cover it.Cook for 10 to 15 minutes.
I use some local herbs to enhance the aroma of the rice.You can use basmati rice instead of normal rice to enhance the flavour.
After 15 minutes, off the gas and stir the rice mixture evenly to avoid lump inside.Let it cool in room temperature but you should not cool them under a fan or store them in refregirator.It will break the dough while kneading.So keep patience and let it cool in room temprature.
When the rice mixture is warm,knead it nicely like a wheat dough ,you can use some water or oil while kneadint he dough.Kneading palys important role while making pitha.If any lumps are there then throw them.
Make medium size balls out of the dough.Now place 1 or 2 tsp of the prepared stuffing into the ball and seal it tight.
You can shape the pitha into different shapes.In odisha we call it as manda and its shape should be round ball.You can shape them a modak too.
Now boil 1 cup of water in a steamer and steam these balls around 10 minutes.Over steaming can be broken the balls.
Fried modak or manda or rice ball,you dont need to boil them.Only prepare balls and fry them enough oil until crispy and brown both the sides.

things we need to prepare
1 cup rice flour-prefere home made
3/4 cup water
1 cup finely chopped rpe jack fruti flesh
1 tsbp sugar (can use jaggery sugar)
1 1/2 cups scrapped coconut
1/2 tsp cardamom powder
1 tsp crushed pepper
1 tsp melted ghee/clarifie butter
In a pan fry chopped jack fruit along with ghee.Fry them some seconds.Add coconut,sugar and stir fry for 5 minutes.Sprinkle cardamom powder,crusheed pepper and combine them well.Let it cool.
In a pot boil water along with slight salt.When the water start to boil add rice flour and cook on low flame for 10 to 15 minutes.
Now off the gas and mix the rice evenly.Let it cool and knead to form a smooth dough.
Make medium balls and place 2 tsp of the stuffing into it,shape into balls.Do the same for rest of the dough.
Now steam balls in a stemer for 10 0 to 15 minutes and serve hot.
