Jack fruit seed fritters are simple crunchy and delicious gluten free snacks.Its an easy and great way of cooking jack fruit seeds.
Since its running of month June there are plenty of availability of ripe jack fruits in odisha,India. We always get one from any of our friends.My mother prepare many dishes from ripe jack fruits,but what about the seeds.I love to cook vegetarian food,as much you involved it surprising me.
I never known seeds of jack fruit which looks so hard but get soft after boiling.The seeds which amaze you some time taste like sweet chest nut or sometime like sweet potatoes.In my uncle’s house i remembered he just collect seeds and baked them on a charcoal stove ,we just loved to eat them.
well there are two methods of removing the skin or husk of the seeds.
Collect seeds and dry them on sunlight for 4 to 5 hours.Now you can remove the skin easily.
Clean them and boil in enough water with some salt and cook for 20 minutes on medium flame.Now drain the water and boiled seeds keep on a plate.
But for my recipe you should try to remove second layer of the seed.You need to cook until it soft ,so that when you squeeze the boiled seed, second layer will be come out nicely.
There is no need to dry them on sun light,clean the seeds and boil direct with enough water until it get soft enough.
Its no problem if you leave some without peeling the second layer..
In a processor/blender without water ,blend the seeds in small batches. If there is any chunk,mash them in your hand .
Now add prepared ground paste,chopped onions,finely chopped green chilies,sesame seeds,cumin seeds ,(2 to 3 )tsp of rice flour and salt.Knead the mixture to a soft dough.Use very less water(1 tsp) or you can just wet your hands in water and knead to form a soft dough.Keep it in a refrigerator for 15 minutes.
Now make small balls and give it to a doughnut shape.The dough is little sticky,prepare with wet hands will be easier to give them a shape
Instead of doughnut you can shape of your choice too.
Now drop one by one into hot oil.When you drop thses fritters,flame should high.Now turn them and fry on medium flame.
Cook on medium flame and turn the fritters regularly .When both the sides turn golden brown and crispy,transfer them into a paper towel.
Never cook them on lower flame,else the fritters would start to soak oil.
Jack fruit seed fritters are ready to serve now.You can serve as it is else serve with any mayonnaise/ sauce of your choice.
JACK FRUIT SEED FRITTERS

things we need to prepare
1.5 cups boiled jack fruit seeds
1/2 cup sesame seeds
2 to 3 tsp rice flour
2 finely chopped onion
1/2 tsp cumin seeds
3 to 4 green chilies -optional
Blend (one small onion,3 to 4 red/green chilies,6 to 7 garlic pods)to form a smooth paste.
Collect jack fruit seeds from ripe jack fruit. Clean and boil them in enough water for 15 to 20 minutes in a steaming pot over medium/lower flame.
Discard the water,remove the skin of the seeds.For fritters try to remove the second layer skin too.Squeeze the boiled seeds,so you can easily remove the second layer .If you left 3 to 4 seeds without squeezing the second layer,then there is no problem.
Now in a food processor/blender,blend boiled seeds to a sticky dough without adding water.If you find any chunk after blending,use your hand to mash them.
Take them in a large bowl,add ground paste,finely chopped onions,chilies,rice flour,sesame seeds,cumin seeds and salt.Wet your hands and knead to form a soft dough.Rest it in refrigerator for 15 minutes.
Now make small balls and shape them into dough nut.You can make your own shapes also.Make sure shapes should be little small,so that it will be easier to cook.
Heat oil in a shallow pan or wok,add one by one all the fritters into the hot oil over high flame.Now turn them and fry on medium flame.Fry until both the sides are crunchy and golden brown.
Your jack fruit seed fritters are ready to serve with mayo or any sauce you desire to serve.
