This is my second method of preparing bottle gourd poda pitha/cake.My earlier recipe was sugarfree bottle gourd poda pitha. Today i have prepared JANTA PODA PITHA which is made out of lauki/lau/bottle gourd poda pitha. Where JANTA means pre-cooked and then bake.

This a quite easy and slight laborious process of cooking.But as we know pitha cooks in only in special occasions so little  labor can be acceptable.And at the end of slight labor the taste of the pitha is very soft and sweet ,make your mood happy.

For baking bottle gourd poda pitha i use pressure cooker ,you can prepare it in microwave or traditional way of using banana leaves and kaatha chuli(wood fire chulah).


  • Rinse and soak rice for 3 to 4 hours. Discard all its water.Blend rice with some of water to form a fine mixture.The rice mixture will be slightly coarse. Keep it a side.
  • There should be  always used the best rice for pitha,else your pitha won’t come out nice.So before preparing you should choose the rice those are making for dosa/idli else use basmati rice.They can soak fast and easy to blend them.
  • Rinse and clean bottle gourd. If it is matured then remove all its seeds before chopping it.
  • Cut bottle gourd into small pieces and blend to puree.Since bottle gourd has high in water and rich in vitamins.After blending you should strain pulp and its water.
  • Save the water to use later and keep the pulp in a bowl.

  • In a shallow pan heat 3 tsp ghee,pepper corns when they splutter add coconuts,cashews,fennel seeds.Fry them till cashews turn to light brown.

  • Now add half cup of of bottle-gourd juice,milk ,sugar and salt into it.Stir it.

  • Add bottle guard pulp and stir it.
  • Then slowly add rice mixture into the pan on medium flame and stir continuously to avoid lumps.
  • You should stir until it soaks all the water and form to a sticky soft dough.
  • This step is little laborious and so do all your effort while stirring.

  • Grease an aluminium mould or any utensils.I use an aluminium mould which was my mother’s one of the old utensil,she always use to cook for any traditional pithas.
  • Well now grease your mould with 3 tsp ghee and pour the cooked mixture into it.Set it nicely and garnish as you like.You can also  leave  as it is without garnishing.
  • In our traditional recipes there was no preparation of garnishing,it  comes from modern cooking.
pressure cooker baking
  • Mean while preheat a pressure cooker .For that you should pour 1 cup of salt into the cooker.
  • Keep a stand inside to place the mould. Heat it for 5 minutes.

  • Now place the mould inside the cooker carefully.
  • Cover the lid without whistle and bake for 1 and 1/2 hours over medium/lower flame.
  • Sometimes it takes around 2 hours,so it depends the quantity and consistency of the dough.also.You can see the pitha leave the sides of the mould and look light brown.Now poke a toothpick should be come out without sticking  Allow it to cool.
  • My mother used to cook poda pitha most of the time in the night when every one sleep and In her sleepy eyes she waiting for the pitha to bake and allow it to cool whole night..
  • Now cut it into your desired shapes and enjoy the janta pitha..

total time -5:45 hrs

  • 3 cups bottle gourd puree
  • 2 cups rice
  • 1 1/2 cups sugar
  • 1/2 cups each(milk,small coconut chunks,cashews)
  • 2 to 3 tsp pepper corns
  • 1 tsp fennel seeds(crushed )
  • 1 tsp crushed cardamom
  • 2 tsp finely grated ginger
  • Ghee
  • Salt



Rinse and soak rice for 3 to 4 hours. Discard all its water.Blend rice with some of water to form a fine mixture.The rice mixture will be slightly coarse. Keep it a side.

Rinse and peel off bottle gourds.Remove all its seeds.Cut into chunks and blend it.Separate its water(juice) and pulp of bottle guard.


Heat 3 tsp ghee in a shallow pan ,add pepper corns,cashews,fennel seeds and stir it.

Now add bottle gourd pulp,slightly fry them.Add 1/2 cup of bottle guard water and stir it.

Now add milk,sugar,cardamom,ginger and salt.When it starts to boil,add rice mixture into it slowly and start stirring continuously  until it absorbs all the water and form a smooth sticky dough consistency.Now off the gas.

In  a medium mould/any suitable utensil grease 3 tsp ghee and set the dough into it .You can garnish it with some cashews or coconut also.


Meanwhile heat a pressure cooker and pour 1 cup of salt inside.Preheat it for 4 to 5 minutes.

Now sit the dough filled mould with the help of a stand inside carefully ,since it is hot.Cover the lid without using whistle.

Now bake it for 1 hour 30 minutes ,some time take it take less/more  time.Then off the heat and let it be cool naturally.The upper side look brown and poke a toothpick should be come out without sticking,your pitha is ready to serve now.

Cut it into your desired pieces and enjoy with your families.
