Bamboo shoot fritters are crunchy and flavourful along with less spices will be one of the most delectable fritter in the season of cold winter. The hot and crisp fritters paired with rice or can be serve in any time snacks will be sated your small time hunger.

Bamboo shoot now a days a very popular in Asian cuisine to around the world. But these seasonal  grass will be one of a staple food in various dishes of western Odisha. Its most popular name in local is kardi. In India bamboo shoots are cultivated in the month of monsoon and  preserved it in salt to use in off seasons.  I have used shredded/striped bamboo shoot and it’s a preserved one. Whether its fresh or preserved you need to boil them first to remove the toxic and then its completely edible to eat.

I grown up many delicacy of bamboo shoots ,fritter / kardi Bhaja is one of them. The easiest and fastest dish to cook. I love the crunch of the tender fresh bamboo shoot which my mother used to cook in pulse but for the fritter I feel the preserved version would be better. Though the bamboo shoots are very distinct flavour you need to boil them to reduce the smell some level, has power house of both soluble and non soluble fiber dietary and protein too. It has less carbohydrate is one of popular ketogenic food too. It not only improve your immune system but also a path of living a better heart too.

Preserved bamboo shoots have already salt inside and cleaned. You only need to boil them direct in water. Its necessary to boil the bamboo shoots to get rid off  the toxic in it and make it  eatable.

Discard the water once strained, 2 or 3 times to reduce the odour of the bamboo shoots.

Mix all the ingredients to form a thick paste of mixture.

Heat an non stick pan and grease it with oil. Place one by one some bamboo mixture on pan and fry both the sides until crisp or your desired consistancy.


Kardi Bhaja/Bamboo shoot Fritter

yield : servings 7 fritters

cook time : 8 minutes

total time : 38 minutes


things we need to prepare

  • 250 g bamboo shoots shredded/striped
  • 1 medium onion -finely chopped
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 3 to 4 green chilies -finely chopped

preparing stuffed paste

  • 1 small onion
  • 3 to 4 garlic cloves
  • small ginger
  • 2 to 3 cloves

Put all in a small jar and blend until get a smooth paste.

preparing rice paste

  • 2 tsp poppy seeds
  • 1/4 th tsp cumin seeds
  • 1 handful of rice –soaked in half cup of water for half an hour. Discard the water.

Put all in a small jar and form a smooth paste along with little water. Keep it aside.


Instructions

Rinse and boil bamboo shoot in 1.5 cups of water. Boil on medium flame 6 to 7 minutes. Strain the bamboo shoots.


In a large bowl, add boiled bamboo shoots, prepared rice paste,2 to 3 tsp of ground paste and rest of the ingredients. Combine all together.


Meanwhile heat a flat non stick pan or cast iron tawa and spread some oil. Now make medium ball and place on hot pan, slowly flatten it using tuner / bottom of spatula. Sprinkle some oil over the flatten bamboo fritters.

Allow it to sit on medium flame some seconds and then turn it. Sprinkle some oil again and fry both sides until crisp and golden both the sides. Serve hot along with garden fresh salads or steamed rice.
