Gobi curry is a simple and quick dish which we can often cook in our family.No doubt now a days it’s available in all season but the real taste of cauliflower comes in winter.so the taste of the cauliflower and potato curry enhance in winter more than the other seasons.

we odia says it as kobi jhola (cauliflower curry) It’s mouth watering for kids and adults as well. It goes well with paratha/roti/steamed ghee rice.

INSTRUCTION

  • 500g cauliflower/one medium head cauliflower
  • 4 Boiled potatoes
  • 3 Medium tomatoes
  • 1 Chopped onion
  • 1 tsp Turmeric powder
  • 1 tsp Chili powder
  • Garam masala
  • Chopped coriander leaves
  • 1/2 tsp Sugar
  • Mustard oil
  • Salt

For making paste

  • 2 Onions
  • 1 Head garlic(15 to 20 garlic pods)
  • 1 Gmall ginger piece
  • 4 Cloves

Grind all the ingredients for masala and make a fine and smooth paste.

PREPARATION

STEP 1

  • Cut cauliflowers into medium florets .Rinse them well.
  • I always prefer to blanch the cauliflowers with some salt,turmeric to get rid of insects inside.
  • Boil 3 cups of water with salt,1/2 tsp turmeric and Switch off.Now pour the boiled water into the florets and let it be for 15 minutes.
  • Discard the water and strain the florets.

STEP 2

  • Heat 1//2 cup of  oil in a kadai or wok. Add the blanched cauliflower florets to the hot oil and saute on  medium flame till they start to get light brown.Saute all the florets batch wise.
  • After sauteed keep all the florets in a lukewarm salted water.so that the excess oil will be discarded.

STEP 3

  • In the same pan add pinch of sugar,when it turns brown add chopped onions,turmeric,chili powder.
  • Saute till the chopped onions are get golden brown then add chopped tomatoes.Fry until tomatoes get soft.

STEP 4

  • Add prepared paste.stir it often till the oil starts to leave the sides of the masala and a nice aroma comes.This process takes around 10 minutes.

STEP 5

  • Discard the oily water from the florets.
  • Cut two boiled potatoes into cube.
  • Add boiled potatoes,fried cauliflowers and garam masala.Saute it and mix with the masala evenly.

STEP 6

  • Add 2 1/2 cups of water and cook on high flame.
  • Mash the rest of boiled potatoes and a make ball shape.
  • When the gravy starts to boil add mashed boiled potatoes.cook for 1 minutes

STEP 7

  • Add salt and cook on shimmer until get a thick gravy.Now turn off the gas,sprinkle coriander leaves.
