How ever the kheer is pretty mush eaten once in a year mostly famous as fasting food. Lotus seeds also known as fox nut or Phool Makhana is most popular in every Indian sub continental dish. Lotus a divine flower and seeds are truly edible to eat .India is a place of festivals and blossoms with desserts when it comes to celebrations.

Festivals are uncompleted with out sweets or desserts. Kheer is an quintessential Indian dessert loved by all over the country. Kheer is symbolized as a treasure of happiness, be it festival or any thing special in life a perfect dessert cooked in less time to indulge in. Serve this easy recipe as prasad in any puja. Now fasting during festive season won’t stop you to relish such delicious dessert Makhana kheer or lotus seed tapioca pudding.

Roast the lotus seeds in clarified butter until crisp. It takes around 2 minutes. I have separated 1 cup to crushed it. Pulse the seeds instead of blend into powder.

If you are not using milkmaid then boil the milk around 30 minutes. Then add roasted seeds along with all the ingredients.

Boil them until thick. I have used milkmaid and dont add sugar. But you can more sugar of your taste and never forget to add salt which will enhance the taste of sweetness.

I love little thin to my kheer, for more thickness you can cook the milk until get your desire consistency .After adding all the ingredients off the gas and allow i to sit the kheer for 15 to 20 minutes. So the lotus seeds will be soaked in creamy milk.

Lotus seed Tapioca pudding/ Makhana Sabudana Kheer

yields servings 8

prep time : 4 hours

cook time : 30 minutes

total time : 4 hours 30 minutes

 things we need to prepare

  • 3 cups lotus seeds
  • 4 cups milk
  • 200g milk maid
  • 4 tbsp. tapioca seeds/sabudana
  • 1/2 cup sugar -optional
  • 1/2 tsp cardamom powder
  • 2 tsp ghee/clarified butter
  • pinch of salt
  • 1/2 cup crushed dried fruits (cashews, raisins..)


Before preparing the kheer keep ready the soaked sabudana. Else rinse and soak sabudana seeds in enough water around 4 hours.

In a pan heat ghee and shallow fry lotus seeds until roasted around 2 minutes.

Take 1 cup out of the lotus seeds and blend to crushed powder. Keep it aside.

In a deep heavy bottomed pan boil milk over high flame around 15 minutes. Add milk maid, lotus seeds, lotus seed powder and sabudana.

Add pinch of salt and boil for 15 minutes or until get a thick consistency of the milk .Off the flame sprinkle cardamom powder and crushed dried fruits.

Serve it hot or chilled in a bowl.
