Besar  is a very popular  in Odisha. It may be vegetarian or non-vegetarian. Most often besar cooks in every odia family. But yes fish and mustard paste combination is luscious. I am prepared with small fish and mustard paste.

I always cook big fish but this time I found these small fishes in our local market. As all we know Fish is a high-protein, low-fat food that provides a range of health benefits. And when it comes to small fish then I must say everyone should eat small fish at least once in week for good health.

Coming to my dish I choose maurali or smelt fish one of the best fish in the world which my mother says. I always see her to cook maurali with different spices and those curries are really comes out great.

This is one of her dish I want to share.

INGREDIENTS

  • 1 chopped onions
  • 8 to 9 crushed garlic pods
  • 2 green chilies(sliced)
  • 2 dried mangoes
  • 1 tomato(chopped)
  • turmeric

Mustard paste

  • 3 tsp mustard seeds
  • ½ cumin seeds
  • ½ fennel seeds
  • 10 to 15 garlic pods
  • ½ tsp turmeric
  • 3 dried red chilies

Grind to make a fine paste of the above spices.

INSTRUCTION

STEP 1 

  • Wash and clean the fishes. Marinate them with some salt and ½ tsp turmeric
  • Keep them for 15 minutes.
  • Drain off the excess water of the fish after marination.

STEP 2

  • Heat 2 tsp oil in a pan , add mustard seeds, fennel seeds, when they start to  fluttered add onions, garlic ,green chilies.
  • Saute it for some time.

STEP 3

  • Add prepared paste,chopped tomatoes,fry on medium flame for 5 seconds..
  • Add tomatoes and cook until they get soft.

STEP 4

  • Add 2 cups of  water,dried mangoes,salt and cook on high flame until the gravy starts to boil.
  • Then take-off the heat and wait for 10 seconds
  • Now add fishes into the gravy.
  • Shimmer for 8 to 10 minutes until it has medium consistency.
  • Now off the gas and serve hot with steamed rice.

STEP BY STEP PREPARATION

STEP 1

  • If you don’t get maurali you can choose any other small fish like chunna machha(smelt fish)which is a god substitute for maurali fish.
  • Wash and clean the fishes. Marinate them with some salt and ½ tsp turmeric
  • Keep them for 15 minutes.
  • Drain off the excess water of the marinated fishes  to avoid bad odour.

STEP 2

  • Heat 2 tsp oil in a pan until smoking ,add mustard seeds,fennel seeds,allow to splutter then add chopped onions,crushed garlic ,green chilies.Saute it.

STEP 3

Add prepared paste,chopped tomatoes,fry on medium flame for 5 seconds..

Add tomatoes and cook until they get soft.

STEP 4

  • Add 2 cups of  water,dried mangoes,salt and cook on high flame until the gravy starts to boil.
  • Then take-off the heat and wait for 10 seconds

STEP 5

  • Now add fishes into the gravy.
  • Shimmer for 8 to 10 minutes until it has medium consistency.
