Milky Rice Balls  is one of my childhood dessert which my mother used to cook for us in Dussehra. We all family member always eager to wait for this.Now i continue the same tradition and all of my family members they love it.

Rice is a auspicious food,anything made from rice is delicious and when we talk about sweet rice balls really the taste feels you divine.

INGREDIENTS

  • · 1 cup rice flour
  • · 1 cup water
  • · 1 ½ liter full fat milk
  • · ½ cup sugar
  • · 1 tsp.  cardamom powder
  • · 1 tsp. vinegar
  • · Saffron

STEP BY STEP PREPARATION 

STEP 1

FOR PREPARING STUFFING

  • Heat half liter of milk in a pot on medium flame. When the milk starts to boil add vinegar. Stir until the entire milk curdles .Turn off the gas when the milk curdles completely. Now strain it using a muslin cloth.
  • Heat another pan add 1 tsp. sugar into the paneer, fry them on medium flame until all the water of the mixture evaporated.
  • Fry the mixture, when it turns light brown off the gas. Remove it on a pan and off the gas.

STEP 2

PREPARING RICE BALLS

  • In a pan boil one cup of water, some salt.
  • Add the rice flour in small batches and mix continuously so that no lumps are formed.
  • Keep stirring on low flame until all water is evaporated. Off the gas and cover it. Allow it to cool.

STEP 3

PREPARING MILKY BALLS

  • Rub ghee on your palm and knead the dough to make a smooth soft dough.
  • Now make small lemon size balls from the dough.
  • Take one ball, flatten out and put some of the stuffing into it

  • Close it and make a ball shape .You can make different shapes also.
  • Now do the same with the remaining mixture.

  • In a pan boil 1 liter of milk with ½ cup of water.
  • Let it boil for 10 minutes. Pour the rice balls and sugar into it.
  • Cook on medium flame and stir frequently.
  • When the balls get soft or milk get thick,add cardamom powder,off the gas. It will take half an hour to cook the balls.
  • Now serve hot with sprinkle some saffron over it.
