An amazing dish with less household spices.A healthy and hearty dish always  in demand in every weekend of our family.

Button mushrooms are easily available in little plastic boxes in most of the grocery store  but though summer is on his mood so its very difficult to find it in odisha. Luckily if you get some of them are not in good condition to cook them.So i decided to go our all season and my favorite paddy straw mushroom.

Paddy straw mushrooms are the best replacement for meaty flavor dish.It tastes amazing if you choose only top(cap which looks like umbrella) of the mushroom instead of using stems.

I have removed stems and use only caps of mushrooms.Wash them in turmeric water and after two to three times of rinse,squeeze it.Chop them finely


Finely chopped mushrooms will take less time to cook and will be easy to roll out while preparing paratha.


Always use more amount and finely chopped onions while preparing mushrooms.It increase the taste of the stuffing.


Saute chopped onion and add mushrooms.Cook on high flame is the best solution to get rid of the water from the mushrooms.You should cook over high flame and wait for some time without stirring..Stir and cook till it looks brown.

Add pinch of salt and garam masala to enhance the taste.You can use some other spices like ginger garlic paste,aamchur powder,chat masala. I like to keep it as simple as possible without loosing the taste of the mushroom.At the end sprinkle some finely chopped coriander leaves which is a perfect matching for any paratha stuffing.Let it cool.


Prepare two medium balls from prepared wheat dough. Roll out big poori shape roti.


Now spread the prepared stuff over the roti .The amount of the stuffing should be little more.Now  cover it with another roti. Use little water to seal the side of the roti.

Now roll it carefully and flat it slightly  without breaking or spilling out the stuffs.Always don’t put pressure on roti ,better to roll slightly big and place it on the hot tawa.


Once you place it on hot tawa,bake it on medium flame .Flip it when the bottom side of paratha done nicely.


You can see the spot of brown on paratha .It is showing that your paratha is cooked properly.

Now drizzle oil on both the sides and cook little crispy and golden brown both the sides.

You can serve it with any kind of chutney.But serving sour n savory curd is the best option for any kind of stuffed paratha.

thing we need to prepare

for dough preparation

  • 1 cup wheat flour
  • water
  • salt

Mix the flour and salt along with adding little water and knead to make a soft dough. Set aside for at least 30 minutes.

For preparing stuffing

  • 200g mushrooms
  • 2 onions (finely chopped)
  • 1/2 tsp turmeric
  • Garam masala
  • 2 to 3 tsp green chilies
  • Few chopped coriander leaves
  • Oil
  • Salt


Separate the cap and stems of mushrooms.clean and squeeze  mushroom caps.Now finely chop them.If you would like to use the stem of the mushroom,then chop them finely after squeeze it.

In a pan heat 2 tsp oil,fry onion,green chilies.Add turmeric and chopped mushrooms.

Cook on high flame  until the mushrooms turn light brown and all the water evaporated.

Now sprinkle salt and garam masala and chopped coriander leaves.Mix them well and let it cool.

Make two medium ball and roll out into two small rotis. Spread evenly prepared stuffing on one roti and cover it with another one.Seal the sides using little water.Roll it again to a flat roti.

Heat a tawa and cook both the sides.Once done drizzle some oil till golden brown both the sides.Serve hot with any chutney or curd.
