This delicious vegan dish is a typical odia chhatu aalu tarkari.This is one of my all time favorite dish.But the curry goes well if matured straw mushrooms take to cook.Most of the time they harvested when they are button stage.Not any other mushrooms beat this mushrooms taste.When ever i find them,i just buy them in a snap from our local market.

INGREDIENTS

  • 500g Mushrooms
  • 3 to 4 Boiled potatoes
  • 1 Onion(chopped)
  • ½ tsp Sugar
  • 1 Cinnamon stick
  • 1 Bay leaf
  • Mustard oil
  • Salt
  • Water
  • A handful of coriander leaves

For making masala paste

  • 2 onions
  • 1 tomato(seeded)
  • 3 to 4 cloves
  • 9 to 10 garlic cloves

Blend to make a fine paste and keep aside.

STEP BY STEP PREPARATION

STEP 1

I always love to cook matured straw mushrooms,which is a best substitute for vegetarians.

STEP 2

Cut mushrooms and soak them in a turmeric water(1/2 tsp turmeric) for 5 minutes. wash and Squeeze water from mushrooms

STEP 3

Mustard oil always goes well for this dish.But if you dont available can take any other cooking oil.

STEP 4

  • In a pan add 2 to 3 tsp oil,let it smokes. and fry mushrooms for 5 to 6 minutes on high flame. Mushrooms have a ton of water in them. When you cook them in a pan, the water will seep out. Make sure all that water should  evaporate before cooking.
  • You can also use direct mushrooms without shallow fry them .
  • In same pan add 2 to 3 tsp oil,let it smokes. and fry mushrooms for 5 to 6 minutes.
  • In a pan add 2 tsp oil, add sugar,bay leaf when sugar turns brown add onions,turmeric,chili powder.Saute it.

STEP 5

  • Now add prepared paste .

STEP 6

  • Fry them until raw smell goes off.

STEP 7

  • In the mean while boil potatoes and mashed them.

STEP 8

  • Add 1 cup of water,salt and mashed potatoes.Cook on medium flame for 10 minutes.Sprinkle coriander leaves and off the heat.

DIRECTIONS

  6. Add 1 cup of water,salt and mashed potatoes.Cook on medium flame for 10 minutes.Sprinkle coriander leaves and off the heat.
