Mushroom and potato with gravy is a simple and spicy dish made out of home made spices.
We all know mushroom and potato are always a great combination. Its very common to find potato and mushroom in odia cuisine.
Garnish with chopped coriander leaves is an absolute delight to have this dish. It is an ideal recipe for lunch and weekend dinner parties. Steamed rice or flat Indian breads go well with this recipe.
I have used the most common mushroom find in odisha i.e paddy straw mushrooms. For the recipe you can use any mushroom to cook.
Mushrooms are delicate ,so always cut them into pieces before rinse them.But you need to rinse the mushrooms thoroughly to remove the dirt. Soak them in turmeric water for 15 minutes is a traditional way to clean the mushrooms.
Squeeze the mushrooms with out breaking them and discard the water.
I always love to use mustard oil to fry the mushrooms.Its pungent smell and texture makes the dish more aromatic and colourful .
Use of a heavy bottomed pot is another best way of cooking Indian spicy curry….
Fry mushrooms,potatoes in hot mustard oil until brown and char.Take them out and keep in a plate.
I have not peeled out potatoes to remain the taste of potato in the curry.
Again heat oil and add star anise,bay leaf. Fry chopped onions until light brown.Add chili powder,turmeric powder and saute it.
Add prepared ground paste and fry until raw smell goes off.In Indian cooking frying masala until leave the sides of the pan is an important step of cooking.So if you are in good mood and happy to serve a slow pot cooking then,mushroom potato gravy is the right choice..
Now add fried potatoes and combine with the masala. Add coriander powder,garam masala and saute it on medium flame for some seconds.
Add mushrooms ,stir it and pour 1.5 cups of water.Cook over high flame when gravy start to boil, add salt and cook on simmer until get a thick consistency.Sprinkle chopped coriander leaves.

things we need to prepare
500 g mushrooms
4 to 5 baby potatoes (3 medium potatoes)
1/2 tsp red chili powder
1/2 tsp turmeric powder
1 star anise
1 bay leaf
1/2 tsp coriander powder
chopped coriander leaves – one hand full
2 onions -chopped
preparation ground paste
3 large onions – cut into small cubes
8 to 9 garlic cloves
4 to 5 cloves
small ginger piece
1 small tomato -seeded
blend all the ingredients and form a smooth paste.
Cut mushrooms into two pieces.Soak them in turmeric water for 15 minutes.Rinse thoroughly ,Squeeze the mushrooms and discard the water.
Rinse baby potatoes and cut them into two pieces. For medium potatoes cut into 4 pieces.There is no need to peel the potato skin.
In a heavy bottomed pan heat 2 tbsp of mustard oil and fry mushrooms in small batches until brown and char.Mushrooms leave water so cook over higher flame to evaporate water quickly.
Also fry potatoes until brown.Take all the fried potatoes and mushrooms in a plate.
In a heavy bottomed pot heat mustard oil ,allow it to smoke over medium flame.Add star anise,bay leaf when they caramelised add chopped onions,turmeric powder,red chili powder and fry until onions are get light brown.
Add ground paste and fry till aromatic.It will take few times.Add fried potatoes ,coriander powder ,garam masala and saute it over medium flame.
Add fried mushrooms,salt and stir it.Add 1.5 cups of water and cook over high flame until boil.Cook on simmer until get a desire thick consistency. Garnish it with chopped coriander before serving on plate.
