Paratha just like a mother or women packed her loved all in one pocket and enjoy serving with full of gratitude. The name of paratha is quite popular in Indian house hold originated from north Indian subcontinent. My recipe made out of peanut stuffing where these tiny beans look like are a power house of many plant based fibres, proteins and minerals as well.My recipe peanut paratha is crispy and nourish a healthy appetite.
A piece of memory always in a mind how my mother was busy in household work,i was late to school. Most of the time i only eat an apple and straight away to school. In short period of time, she never forgotten to hold me a hot lunch box and said ” dont miss it”.The aroma of desi ghee oozing my friends and enamoured them to have one byte.I was feeling so grate and blissful realised mothers are always mothers. So for me paratha is a mother’s love. Those who feel ghee is for fatness, but for my mother it’s a health maker. One teaspoon of ghee taking every day nourish good health, which i observed daily.
When i cooked first time peanut paratha and served to my mother. She just eat one byte and started a long list of questions.Did u stuffed onion? is it tomato? Before she jumped for more, i just asked “what happened”? She replied its crispy and scrumptious .She said if paratha is mother’s warmth for you then i would say “its daughter’s love with care and satisfaction for me”.At the end it was a happy ending of my new discovered of peanut paratha with such great words.
To preparing paratha you can choose peanuts with shell or without either.I always prefer shelled peanuts, they take less time to prepare any dish and available in less price in store as well.
Roasting peanuts in a heavy bottomed pan is always to get a crunchy and well fried peanuts.Frying them in low flame allow it to fry evenly instead of bake in oven.
After roasting,it always need to cool the peanuts.Rub in your hand or place them in a thick kitchen towel and rub them to remove all the skins from the peanuts.
Fry tomatoes ,onions with spices in very less oil to avoid clumping together the stuffing.
Make a medium roti out of a medium dough ball. Spread enough stuffing over the roti ,it should be covered three fourth of the roti. Always leave little space between stuffing and border of the roti.
Fold it into half which would like a semi circle and press the shape evenly to allow the stuffing spread it well in the paratha.
Again fold to get the triangle shape.Roll each sides and to form a flatten triangle shaped paratha.
Heat a non stick pan or griddle.Fry until brown spot formed both sides of paratha.
Drizzle little oil and roast both the sides until aromatic and crisp.
