pineapple poda pitha is my own discovered.Before preparing i was little afraid how it will come out.I love pineapple and it’s pleasant smell always fascinating me to experiment and discovered something new/different.This delectable pitha not only looking delicious but also gives the taste of pure odia food…
For pineapple steam cake the main ingredient is pineapple so always try to buy a fresh,juicy and pleasant flavor pineapple which enhance the taste of the pitha..
STEP BY STEP INSTRUCTIONS WITH PHOTOS..
Soak rice for 6 to 7 hours.Rinse them well.Dry rice under the shade or sunlight.
When all water dries,grind them.Here we don’t need fine powder of rice.The rice flour should be little coarse like semolina.
Always use a juicy and sweet pineapple.
Now cut pineapples into small chunks.You should ditch the skin and remove the core of the pineapple before cutting them.
Steam pineapple with 1 tsp ghee and 1/2 cup water for 2 to 3 whistle over medium flame.Cool it blend to fine smooth puree.
Now add 1/2 cup water boil in a pot and add jaggery. Cook until jaggery dissolves.Cool it and strain to discard impurities.
In a small pan use 1 tsp ghee and fry cashews light brown.You can use cashews without frying also.It never loose the taste of the pitha
Now in a shallow bowl, add rice into jaggery mixture and stir it.Add semolina,pineapple puree,salt,1 tsp ghee,green cardamoms,fried cashews,salt and combine them well.
Here i have not used baking soda.If you wish to add you can add it into the batter.
For making soft pitha,you should decrease the quantity of rice and prepare batter slightly thin.So that there is no need of baking soda to soft the pitha. Which is one of the best tip of my mother..
Rest the batter for 15 to 20 minutes.
In a pressure cooker remove whistle and pour 2 to 3 tsp ghee and spread it nicely.
Pour the prepared mixture into it and cook on medium flame for more than 40 minutes. Poke a toothpick,if it should be come out smoothly without sticking ,off gas and cool it.
You can prepare the pitha in a non stick pan also.
