Puli – Traditional pitha of odisha made of jaggery and skinned black gram. Puli is staple food of Diwali in our Home.

This sweet and soft delicacy goes well with dry peas curry or sweet milk.But i am sure once you taste it,you can’t wait for anything to eat with it because it tastes yum as it is.


INGREDIENTS

  • 1 cup urad dal/skinned black gram
  • 1/4 th cup rice flour(you can soak rice and blend them)
  • 1/2 cup jaggery
  • salt
  • water

ghee/cooking oil

LET’S START PREPARATION

  • Soak lentils in enough water over night or 6 to 7 hours.Then wash thoroughly and discard it’s water.
  • Blend them to make a fine smooth paste
  • Add rice flour powder into it .Else you can soak rice and blend to make a fine smooth paste.Add it to lentils mixture.

First we need to purify jaggery syrup

  • In a cup of water add jaggery and boil them.When jaggery dissolve in water strain it
  •  Add 1 cup grated or crushed jaggery to a sauce pan with 1/2 cup of  water.
  • Heat on a medium flame  until the jaggery completely melts..Filter the jaggery syrup with a strainer to remove impurities.Now cool the syrup and no need to boil the syrup again.
  • Now add prepared mixture into jaggery syrup with little salt.The consistency of the mixture should be little thick.Keep it aside for 10 to 15 minutes
  • Now grease a iron skillet/ tawa with ghee or oil.
  • Here i use non stick tawa,sprinkle 1/2 tsp of ghee over the pan.stir the  the jaggery mixture .
  •   Take a ladle full of the batter and gently pour it on the pan
  •    spread the batter very lightly ,it should be little thicker in size
  • When the base becomes golden brown turn it.Let it cook for more 1 minute on medium flame.off the heat and serve as it is / any curry /chutney
