Ragi stuffed fried balls are resembles chocolate balls have sweet aromatic stuffs inside will indulge your taste bud with out any guilty of eating a fried food which is a healthy snack.

Ragi fried balls are one of a staple prasad or a craving food of our family which my mother used to prepare since my childhood. It takes very less effort and easy to cook. The dish is suitable as both for growing children and adult as well. It also consider as a food to carry for any picnic or travel too.

Ragi fried ball , a wonder food made with an ancient grain of our ancestors. These  tiny look small seeds are a power box of nutritious rather than grains like wheat or rice.These old fashioned grains are traditionally staple food of some cuisines which was lost few years back.But now it has come back and these gluten free millets are one of the most demanding and versatile food in  modern kitchen.

My fried ragi balls are also a quiet old fashioned dish which has the sweetness of jaggery and richness of coconut.In odia cuisine ragi is not new which is popular as mandia .Mandia jau a very traditional and old sour porridge dish of summer for farmers which is now very popular in most house-hold of odisha. Ragi fried balls are traditionally known in odia kitchen is  ragi/mandia kakara .

Mandia kakara where ragi flours are cooked in hot water to prepare a dough.Small balls of ragi dough are stuffed in coconut-jaggery stuffing .Then fry them in hot oil until crunchy and dark brown.

Always use scrapped coconut instead of grated coconut for any coconut stuffing to get a better result.In a pan add the coconut mixture and stir frequently over medium flame.Add all the ingredients for stuffing one by one.You can either use jaggery or sugar in the stuffing.

Cook for 4 to 5 minutes and allow it to cool.

You can either fry ragi flour for for 5 minutes before preparing the dish to get a nice nutty aroma of the ragi flour or can be cooked direct.

Heat water in a pan and add slowly the flour and stir continuously until form a dough consistency.

Off the gas and allow the ragi dough to cool.Then add little wheat flour and kneading to make a soft dough.The dough is little soft ,so use oil in your hand or sprinkle little water in dough in the preparing of balls.

Prepare small or medium shaped balls from the dough.

Now make a bowl shaped shown in the picture from each balls and keep some stuffing into the ball.Seal it using your hand.

Heat oil and fry each balls until dark brown both the sides. Ragi soaks less oil rather than other wheat flour balls that’s why its consider as a healthy and wonder grain.

things we need to prepare

preparing stuffing

  • 2 cups scrapped coconut
  • 1/2 cup crushed jaggery -sweet as desire
  • 1/2 tsp fennel seeds
  • 3 to 4 crushed cardamom
  • 1 tsp crushed pepper corns
  • 1/2 cup cashews

In a hot pan add scrapped coconut and allow it to stir fry for 3 to 4 minutes.

Now add all the ingredients one by one.Combine all evenly and stir frequently to avoid char for 5 to 7 minutes.

Off the flame and allow the stuffing to cool.


preparing ragi dough

  • 500 g of ragi flour 
  • 500 ml water
  • 1/2 cup wheat flour
  • 250 g sugar – as 
  • oil -to fry

Instructions

Heat water in a pan.Add sugar and salt into it.When the water start to boil pour the ragi flour slowly and stir continuously to avoid lump in it.Off the gas.


When the ragi mixture is cool,add slowly wheat flour to knead the mixture to form a soft dough.Now make medium balls or small balls from the dough.

The dough is quiet delicate to handle..Always use little water or oil in your hand while making balls or in the time of stuffing inside the balls


Take one ball and shape it to a bowl. Place 1 tsp or 1/2 tsp of the stuffing inside the ball and seal to form a round ball shaped.Do the same for rest of th balls.


Heat enough oil in a pan.Drop one by one ball into the hot oil slowly over high flame.Turn the balls and fry over medium flame.

Keep stirring until both the sides of the balls are turned dark brown in colour .It will take 5 minutes to fry the ball crunchy.Take them out and repeat the process for rest of the balls.

Your ragi fried balls are ready to serve now and relish these sweet chocolaty balls in any festive or casual time with your family.
