Red cow pea is another magical bean belong to legume family which is rich source of fibre and nutritious .Red cow peas stir fried is a simple and easy dish can be serve in break fast or main dish as side menu. It is taste great with roti or steamed rice along with some green salads.
Its an ancient cow peas mostly consumed in village dishes . But now its richness of protein and a great substitute for meat enhance its popularity world wide.
It has a nutty and earthy flavour. But once they cooked its mild and dense texture that taste great in many bean dishes like soup, curry pasta…It could be a great small time hunger or brunch. Also wrap it with roti to carry for any short time picnic.
Red cow peas are belonged to bean family, so we need to clean them soak in enough water over night for the best result. When they soaked discard the water and add in pressure cooker along with little water and salt.
Red cow peas can be soaked before 2 to 3 hours. But you need to fry them for at least 2 to 3 minutes. Soak them in water. Add them in pressure cooker along with water and salt. You should be cooked on lower flame and cook for 8 to 9 whistles. You can check them once and wait for some more whistles until soft. Don’t worry it wont be mushy if you cook for long whistles.
After steamed allow it to cool.
In a pan or wok, add oil and onions, tomatoes and green chilies. Fry them. Add rest of the spices.
The water of boiled peas are very nutritious, instead of discard i would suggest pour beans along with water in the pan. Cook on high flame and keep stirring until water evaporated or less water in pan.

things we need to prepare
1 cup red cow peas/ Lobhia/ Borboti
2 medium tomatoes -chopped
2 medium onions -chopped
5 to 6 green chilies -chopped
1/2 tsp turmeric
1/2 tsp red chili powder
1/2 tsp coriander powder
mustard oil -any cooking oil
one handful coriander leaves –finely chopped
Thoroughly clean and wash red cow peas. Soak them in 2 cups of water and allow to soak over night or at least 7 to 8 hours.
Now discard the water and add 1.5 cups of water in a pressure cooker, put soaked peas and salt. Steam over lower medium flame for 4 to 5 whistles or until soft. Off the flame and allow the cooker to cool.
In a pan heat mustard oil and wait until smoked. Add onions, green chilies and chopped tomatoes. Fry them until tomatoes are soft. Add turmeric, chili powder, coriander powder and garam masala and sauté it
Now pour the boiled peas into the pan and combine them nicely. We have already added salt in peas, so before adding little more salt taste it.
Cook over medium flame until get a thick consistency else cook until the water soaked, if you like to serve dried cow peas.
Off the flame and sprinkle chopped coriander leaves. Now you can serve as stuffed in with roti or any bread else with steamed rice.
