Santula a classic food from the of  state odisha subcontinent of  eastern India. It is one of the healthiest food contains less oil with out adding of spices. Although its a less oily dish you can add garlic and ginger tempering in richness of mustard oil to enhance the flavour.

Its consider as one of the dish if you are suffering from any stomach disorder or in the time of fever it tastes good for your tasteless mouth.. Cluster bean Santula is  a mixed vegetable dish of  papaya, brinjal and potato. Its one of the healthy and hearty dish mostly prepared or you can have when you want to break from spicy food.

In the month of winter , sake of cluster beans are selling in the local market or in a push cart in odisha on the arrival of winter. In odisha its believed as one of  the auspicious vegetable  consume for making curries, fries ,besar etc. and available when the winter is set to celebrate ritual festivals.

The bean it self a beauty belongs to legume family. Though the bean is only available in the month of winter is snowy greenish appearance , is rich in fibre and gives health benefit but also maintain digestive system of us.

preparing the recipe you need to only topping and tailing the beans. The end of the beans need to plucked out to remove the thick thread, this process will  make the cooking faster and tender the beans when you eat..

You can skip the use of onion and garlic but use of them make the dish more flavourful and enjoyable. The cluster bean Santula or guar Santula contains vegetables like papaya nd brinjal and potato to toned down the bitterness of the bean and mixed of vegetables make the dish not only scrumptious  but also healthy and nutritious.

For santula you need to cut the vegetables evenly or small chunks to cook faster. I would always prefer pressure cooker is the healthy option and takes vegetables to less time. Cook vegetables over medium flame and after one whistle off the flame nd cold manually the pressure cooker under water immediately.

The tempering is the main part for Santula ,so always look your way to not to burn it.

Some people love to use tomatoes in Santula i dont like to use because its Santula not curry for me. Most of the people love to pour milk at the end to make the dish creamy and get the benefit of milk too. Its its your desire whether to use but i mostly prefer to skip it.

Santula with Cluster Bean

things we need to prepare

  • 250 g cluster beans -cut both the ends ,remove the string by breaking it slight or pulling the ends. 
  • 1 small papaya -peeled- small cubes
  • 2 medium potatoes -peeled -small cubes
  • 2 medium brinjals – small cubes
  • 2 tsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp crushed ginger
  • 4 to 5 crushed garlic pods -optional
  • 1 medium onion -finely chopped -optional
  • 2 dried red chilies/green chilies slited
  • pinch of asafoetida


Tender cluster beans are always consume for faster  dish, but the beans most of the time takes time to cook.

Use pressure cooker add the cleaned beans, vegetables  along with 1/2 cup of water  and cook over medium flame for one whistles. If you have matured beans then pressure cook it for 2 to 3 times first and then add rest of vegetables and cook for one whistle.

Now cool the pressure cooker manually under water and take out the boiled vegetables in a bowl.

Heat oil in a deep pot instead of shallow wide pan . Heat and  smoke mustard seeds over medium flame, add mustard seeds and cumin seeds when they start to splutter over medium flame, add crushed ginger garlic, onions and chilies. Fry them along with adding hing, curry leaves. Now  add all the vegetables .

Stirring evenly over medium flame, cook for 5 to 6 minutes until thick consistency. Serve hot with rice or roti.
