Perfect for a cold, hungry winter days, this hearty Spanish Bean stew is certain to satisfy any appetite 

INGREDIENTS

  • · 200g. spinach leaves
  • · 1 cup soya bean seeds
  • · 1 onion(finely chopped)
  • · ½ tsp red chili powder
  • · ½ tsp turmeric
  • · 1 or 2 basil leaves(optional) chopped
  • · oil
  • · salt

· MAKING PASTE

  • · 2 tomatoes
  • · 3 to 4 garlic cloves
  • · ½  of capsicum
  • · 2 green chillies
  • · 1 small onion

In a small pan heat 1 tsp. oil and shallow fry all the ingredients. Cool them and make a fine paste.

INSTRUCTION

STEP 1

  • Cut the stems of the spinach and wash thoroughly. Chop spinach leaves and keep them a side.
  • Soak soya bean with 2 cups of water whole night. In the morning discard its water,
  • Boil them with 1 ½ cup of water, some  salt in a pressure cooker for 15 minutes on lower flame.
  • Remove it from gas until the beans are  get soft or 3 to 4 whistles.
  • Drain the boiled beans water in a cup,don’t throw it.

STEP 2

  • Heat up a pan with 2 tsp oil, add chopped onions, sauté it.

STEP 3

  • Add prepared paste and fry for 5 minutes until the masala leaves the sides of the pan.

STEP 4

  • Now add soy beans except the water. stir fry for 1 minute.

STEP 5

  • Add spinach and saute it.
  •  Add boiled soya water into it.
  • Cook for another 5 minutes or until get a thick consistency of gravy. Sprinkle some chopped basil leaves.
  • Serve hot with roti/paratha

STEP BY STEP PREPARATION

  • Here I use baby spinach so i haven’t  cut them if you use spinach(matured spinach) you can chop them.
