Millets used to  part of our grandparents diet.It’s easy to include millets in our diet as they are very versatile. We can have millet pancakes for breakfast, millets can be prepared like rice, substituted for potatoes when cooked with gravy, and even make a great addition to bread. Millets also make a great source for  vegetables and stews. 

 As i experienced the  right cooking technique and a good recipe can lift any ingredient.

 INGREDIENTS

  •  1 cup little raw millets
  •  2 1/2  cup water ( To cook  1 cup millets we need 2 cups of water )
  • 2 onions ( chopped )
  • 5 to 6 cloves garlic ( finely chopped )
  • 2 carrots ( chopped)
  • 1/2 cup cottage cheese (cubed)
  • Green peas ( 1 cup )
  • 4 to 5 green chilies
  • 1 tsp cumin seeds ( optional )
  • A pinch of sugar

STEP BY STEP PREPARATION

STEP 1

  • For cooking millets ,there is always not necessary to rinse millets , you just need to pick up/ strain if found any dust or black pebbles.
  • Before cooking , i always toast them for 1 to 2 minutes to enhance the nutty flavor of the millet.
  • In a pan heat 3 to 4 tsp oil. Add cumin seeds,, when crackle add chopped onions ,green chilies, garlic and saute it.

STEP 2

  • Now add chopped carrots and peas. Fry them for 1 minutes.

STEP 3

  • Add cottage cheese and shallots.saute it .

STEP 4

  • Add millets, mix well and fry for 1 minute.

STEP 5

  • Now pour water and salt. Cover and when it starts to boil , lower the flame.

STEP 6

  • Cook it on lower flame for 10 minutes.Now stir it , you can add little more water if the rice not cooked well.Sprinkle sugar and stir it.This mix veg dish will taste well when it is little sticky.Now off the heat and serve as it is.

STIR FRIED MILLET WITH VEGGIES

  • In a pan heat 3 to 4 tsp oil. Add cumin seeds,, when crackle add chopped onions ,green chilies, garlic and saute it.
  • Wash and clean carrots.chopped them finely
  • Add cottage cheese ,shallots.saute it.
  • Add millets, mix well and fry for 1 minute
  • Now pour water and salt. Cover and when it starts to boil , lower the flame.
  • Cook it on lower flame for 10 minutes.Now stir it , you can add little more water if the rice not cooked well.Sprinkle sugar and stir it.This mix veg dish will taste well when it is little sticky.Now off the heat and serve as it is.
