Before briefing about the dish i would say that stuffed shrimp snake gourd is not my experimented nor my granny’s dish.Yes i can say its an accidental dish :).In rainy season there are plenty of snake gourds availabilty in  our local market.And my father loves to eat and cook them.

He was trying to prepare both shrimps and snake gourd separately but at last for saving time he started to mix both and this dish was come out.What ever be the reason but i must say stuffed shrimp snake gourd is really a lip smacking dish.Shrimp and burnt bottle gourd are best combination which goes well with steamed rice served with some freshly sliced garden salads.

Snake gourds are literally available in rainy season.But now a days thses are available in summer too.But rain is the real time for these squash to grow,it tastes great if cook with less spices.In odia cuisine there are variety of recipes available for snake gourds.

Scrap slightly  and cut the snake gourds into (2 or 2.5) inch long circular pieces. Using a teaspoon, gently remove their pulps.Chop them and keep  in a plate.

Clean and rinse shrimps.Add salt,slight turmeric and marinate for 15 minutes.Discard water and heat oil in a pan,shallow fry all the shrimps.

This recipe goes well with small shrimps,but they are not availbale always,so if you get little bigger size or any big prawn then devein,fry and chop them into small pieces.

Heat oil in a pan ,add chopped onion and saute it.Add red chili powder,turmeric powder,2 tsp prepared ground paste and fry until raw smell goes off.Add chopped tomatoes and fry until soft.Now add pulps and shrimps into the prepared masala.Add garam masala,salt and cook on simmer.

You should keep the masala dry else when you fry ,the stuffing will be come out.

Now pour generous amount of stuffing into the snake gourd pieces and leave them for 15 minutes.

Prepare a batter ,which should be slightly thin.

Dip the stuffed snake gourd piece into the batter,shake it and remove excess batter from the snake gourd.

Heat 3 to 4 tsp oil and fry each side until completely cooked.You should stir carefully so,no stuffing will come out side.It takes little time to cook ,always fry them on medium flame

You can fry it until slightly burnt or brown,which will enhance the taste of the dish.

STUFFED SHRIMP SNAKE GOURD

things we need to do

  • 2 to 3 snake gourds/ serpent gourd/chichinda/ padwal

for stuffing

  • 50 g shrimps/prawns 
  • 1 tsp grond paste 
  • 1 medium chopped onion
  • pulp of snake gourds
  • 1 tomato -chopped(seeded)
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder -optional
  • oil
  • salt

for Ground Paste

  • 6 to 7 garlic pods
  • 6 to 7 green chilis
  • 1/2 tsp cumin seeds
  • 2 cloves

Blend with little water to form a fine and smooth paste.

for Batter preparation

  • 2 tsp rice flour
  • 1/2 tsp gram flour
  • 1 tsp prepared ground paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder -optional
  • garam masala powder
  • salt
  • 1/2 cup water

Mix all the ingredients to form a slightly thin batter.

Clean and wash thoroughly snake gaurds.Slightly scrap it  and cut into 2″ or 2.5″ cylindrical pieces.

Now remove all the pulps from each snake gourd.Chop the pulps and keep them in a plate.

Clean and rinse shrimps.Keep them aside adding salt and slight tumrmeric for 15 minutes.

Heat oil and shallow fry shrimps until light pink in colour.You can either chop the shrimps or can use as it is.Sometimes its very small so doesn’t require to chop them.It depends on the size.

You can use prawns/big giant prawns instead of shrimps.You need to de-vein and marinate with little turmeric and salt for 15 minutes.Then discard its water, shallow fry and chop them into small pieces.


Heat oil in a pan add chopped onion and saute it.Add red chili powder,turmeric powder,2 tsp prepared ground paste and fry until raw smell goes off.

Add chopped tomatoes, coriander powder and fry until tomatoes are get soft.Now add chopped bottle gourd pulp and shrimps into the prepared masala.Add garam masala,salt and cook on simmer.The prepared masala should be dried,so no need to use any water.

Once its done,off the heat and let it cool.


Now pour enough amount of the stuffing into each snake gourd pieces.Sit the stuffed snake gourds for 10 to 15 minutes.

Deep one bottle gourd into the prepared batter and shake to remove excess batter.

Heat oil in a pan .and fry carefully until each sides of the snake gourd cooked nicely.Do the same for rest of the snake gourds.

Serve warm with some garden fresh salad.
