Suan chaula(rice)/ little millets – a forest food,traditionally consumed in the diet of odisha’s tribal village .These tropical grass food are highly nutritious and good for digestion.
Rice and wheat are replaced of millets. But in India who is the most supplier of the world,people still use it only religious fasting vrat to consume it.Sometimes it is fermented to make alcohol.
As time passed and people of now aware about health little millets are now accepted and considered as a health food .Now a days urban people also seeking and adopted millets as staple food which are healthy and easy to digest.
Not like rice and wheat, millets easy on digestion, good for the heart and does not spike sugar levels of the blood and is also good for the environment..
In this little millet soy rice,i have used onions.If you are preparing for fasting,then can be avoid of onions and garlic.
Millets are versatile can be used for all kinds of dishes like kheer,pitha,rice pulao..and people of all ages can consume it easily.
Samo rice upma or pulao is a simple stir fried rice with richness of soy and vegetables.If you are planning for any fasting then you can avoid garlic,onion which is used in the recipe.Not only in religious fast,my family love to eat little millets in breakfast with versatile dishes,little millets soy stir fried is one of them.you can use veggies of our own choices.
It goes well with any chutney or some one can have it as it is.
Before cooking samo rice,you should know some cooking tip
1.Though the rice is little ,they take less time to cook.If you want a fluffy rice then for 1 cup use 2 cups of water.If you would like porridge then go for 1 cup more.
2.Though the rice size is small,thy get over cooked in most of the time,to avoid always cook on simmer and sit the rice for 10 minutes when the ric is done.You can add 1 tsp oil to avoid clumping rice.

Though its little difficult to rinse the rice.You just need to pour water and discard it after wash.
Boil water in a heavy bottomed pan,Pour rice along with salt.Cook on medium flame till rice get soft.Cover the rice and keep it aside.
Meanwhile soak soy nuggets in hot water.When they swollen rinse it two to three times under water.Squeeze it and discard the water.
Cut them into two pieces and keep it a side.
In a wok or pan,heat oil add cumin seeds.Add onions,crushed ginger garlic ,chili .When they turn light brown,add tomatoes.saute it.
Now add all the vegetables and slight salt.Fry them.
Add rice.Use your hand to fluffy the cooked rice.Combine all nicely..Sprinkle coriander leaves.Sometime it gets dry,so sprinkle water over the rice and cook on lower flame ,cover the lid.
Soma Rice Soy Pulao

things we need to prepare
1 cup millets
2.5 cups water
1/2 cup soy nuggets
1 onion -finely chopped
1/2 cup each(finely chopped carrots,green peas)
1 tsp (crushed ginger and garlic)
1/2 tsp cumin seeds
1 tsp sugar
one handful coriander leaves -chopped
I use millets with out toasting them.But if you would like to toast then,toast them for 4 to 5 minutes until grain become fragrant.Cool it. Rinse them and discard the water.
In a pot boil water ,once it starts to boil pour millets. Cook over high flame when water starts to boil add few drops of oil and salt.Stir it.cook on simmer.
Stir slowly to avoid sticking to the bottom.It cooks like our normal rice,so it absorbs all water,stir once and of the gas.
Cover and sit the millets for for some times.Within 10 minutes the millets will absorb all the a water.
Now fluff the millets carefully using a spoon or your hand.
Meanwhile,rinse and cut all the veggies.
Soak soy nuggets in hot water until they swollen enough.Rinse two to three times and squeeze water from the nuggets.Cut them into two pieces.
Heat oil and add cumin seeds,when they start to splutter add onions,crushed ginger garlic ,salt and saute it.
Add chopped tomatoes and fry until soft.Add veggies and salt. Stir it.
Add soy nuggets and sugar.Saute it.
Now add cooked millets and combine all nicely.Cook on medium flame for 1 minute.You can sprinkle some water while cooking pulao.
Now its done,sprinkle coriander leaves before serving. serve with green salad or any chutney .Always serve them warm before they get dried.
