A delicious and eye catchy dish with fusion of spices. It takes less time and easy to cook. A perfect dish for sudden plan if guest comes or you are in hurry to cook . It goes well with raita and papad.

INGREDIENTS

  • 500g basmati rice
  • 8 to 9 tomatoes
  • 1 medium cinnamon stick
  • 5 to 6 pepper corns
  • 3 to 4 dried broken chilies
  • 6 to 7 curry leaves
  • 1 bay leaf
  • 1 onion
  • One handful of mint leaves
  • Garam masala(optional)
  • Sugar (optional)
  • Salt (your taste..)
  • Water

prepare masala paste

  • 1 onion
  • 6 to 7 garlic pods
  • Small ginger piece
  • 4 to 5 cloves

make fine paste of the above ingredients for masala.

STEP BY STEP PREPARATION OF TOMATO RICE

STEP 1

Wash rice thoroughly and soak in bowl for half an hours adding water.

STEP 2

Wash tomatoes and boil on high flame for 2 minutes.

let the tomatoes cool and remove their skins.

Now chop them in a knife. You can discard the seeds also if you dont like sourness of tomatoes.

STEP 3

Blend them to make a fine and smooth puree.

STEP 4

Heat 2 tsp of oil in a pot,add chopped onions,curry leaves,bay leaf,pepper corns and red chilies. saute some seconds.

STEP 5

Add chili powder,turmeric, prepared paste fry them until raw smell goes off.

STEP 6

Add tomato puree.

STEP 8

Saute it for 2 to 3 minutes.You can add some garam masala.

STEP 9

Now add one liter of water into it

STEP 10

.Add salt and allow it to bowl on high flame

STEP 11

Once boiled add basmati rice into it.Let it boil, when it starts to boil medium the flame and let it cook until rice get soft

STEP 12

Sprinkle pudina leaves and sprinkle sugar.I love to add some sugar to get tangy sweet flavor, it’s optional. and stir it well.Now serve hot with any chutney/raita.

DIRECTIONS

  1. Wash rice thoroughly and soak in bowl for half an hours adding water.
  2. Discard it’ s water, strain the rice and keep it a side.
  3. Now wash the tomatoes and blanch it for 2 to 3 minutes.
  4. Let it cool , remove their skins. Now chop them, put into a blender to make a fine puree.
  5. Keep the puree in a bowl
  6. Now heat 1 tbsp. of oil in a pot, chopped onions, broken chilies when they crackles add turmeric, chili powder and saute it.
  7. Add prepared paste and fry them till raw smell of the masala goes off.
  8. Now add one liter of water into it.Add salt and allow it to bowl on high flame
  9. Once boiled add basmati rice into it.Let it boil, when it starts to boil medium the flame and let it cook until rice get soft.
  10. Now off the stir it well.Now transfer it into a serving bowl and garnish with mint leaves
