INGREDIENTS

PREPARING VADA

  • 250 g urad dal (husked & split black gram )
  • 1/2 cup semolina
  • 1/2 cup cabbage (chopped)
  • 2 tsp cumin seeds
  • 2 tsp ginger( grated)
  • 2 tsp green chilies (chopped)
  • 1/2 tsp baking soda
  • oil (1/2 liter for deep frying)
  • salt

STEP BY STEP METHODS FOR VADA

STEP 1

  • Soak dal for 6 to 7 hours else overnight.Rinse the dal  and blend to make a smooth batter with adding very little water.
  • Wash and chop the cabbage.

STEP 2

  • Now beat the batter for 1 minute in one direction,will hep to make the batter fluffy and smooth.
  • You can test by dropping a pinch of batter in a bowl of water,if it floats then the batter is ready to vada else you need more time to beat the batter.

STEP 3

  • Now add semolina,cabbage,ginger,soda,cumin seeds and salt into it.Again beat the batter and keep it aside for 10 minutes.

STEP 4

  • Now pre-heat oil in a kadai/wok.
  • Now slide vada into the hot oil in medium heat.Once you dropped vadas make the flame high and turn over all the vadas.Now medium the flame and fry till golden brown both the sides.

STEP 6

  • Apply some water  both of your palms , take some batter in your right hand from the bowl. Give it a round shape.make a hole in the center with your thumb. You can also use banana leaves or zip lock bags to give the vada it’s doughnut shape.
  • Now slide vada into the hot oil in medium heat.Once you dropped vadas make the flame high and turn over all the vadas.Now medium the flame and fry till golden brown both the sides.
  • Drain them in an absorbent paper .Serve with any chutney or guguni.
