Soy for me it’s a god gifted for vegan.An amazing food  which is packed with proteins what we get from any non vegetarian food.And the aroma nd taste of  curry is luscious which I must say never upset your tongue and tummy as well.

Some times i call it as vegetarian mutton curry.A complete happy tummy meal….

INGREDIENTS

  • 1 ½ cup  mini soy chunks/meal maker
  • ½ cup split dal(split chickpea or Bengal gram)
  • 3 medium boiled potatoes
  • 1 small tomato
  • 1 onion chopped
  • 1 cinnamon stick
  • ½ tsp sugar
  • ½ tsp turmeric
  • ½ tsp chili powder
  • Water
  • Salt
  • Garam masala
  • Oil

INGREDIENTS FOR MASALA PASTE

  • 1 medium onion
  • 1 garlic head(14 to 15 cloves)
  • 1 small ginger piece
  • 4 cloves

Grind to make a fine paste and keep them a side

HOW TO PREPARE THE DISH

STEP 1

Here I use mini soy chunks.If you are using large soy chunks then use 1 cup.

Boil 3 cups of  water after that add the soy chunks.Off the gas quickly.Let the chunks to swell.It takes half an hour.

Now discard its water and squeeze the excess water from the chunks. Again wash th chunks in normal water and squeeze it.do the same for two to three times.

Now keep the squeezed chunks in a plate.

If you are  using large soy chunks you can cut them into 2 pieces after squeezing from water.

STEP 2

Now heat 3 tsp oil and shallow fry all the chunks until light brown.Remove them into a plate.

STEP 3

In a pressure cooker pour 1 cup of water along with dal. Cook for 15 minutes on medium flame or until it gets soft.Keep them in a bowl.

Now boiled the potatoes,peel off,cut them in four pieces and keep them aside

STEP 4

In a same pan heat 4 tsp oil add sugar, bay leaf wait until the sugar change it’s colour to brown.

Add onions, chili powder, turmeric, tomatoes fry until tomatoes are  get soften.

STEP 5

Pour the prepared masala with ½  tsp  garam masala and keep frying until nice aroma comes out or masala leaves the side of the pan.

STEP 6

Now add fried soy chunks, boiled potatoes mix them nicely.

STEP 7

Add boiled dal. Stir it

STEP 8

Add 2 ½ cups of water, salt and cook on high flame until the gravy start to boil

STEP 9

Once it starts to boil shimmer for 15 minute or until the gravy get a nice thick consistency.

Off the gas and serve hot with steamed rice or roti.

TIPS: If you are  using large soy chunks you can cut them into 2 pieces after squeezing from water.
