INGREDIENTS

 STEP 1

Preparing for marination

INGREDIENTS 

  • 1 cup vegetables(cubes of cauliflowers,potatoes,beans)
  • 1/2 cup paneer cubes
  • 1 tsp coriander powder
  •  1 tsp cumin powder
  • 1 tsp garam masala
  •  Paste of(2 onions,1 head garlic,small ginger,6 cloves)
  • 1 cup Greek yogurt
  • 1 tsp Biryani masala(optional)

DIRECTION

  • Cut and wash all the vegetables and marinate them with the above ingredients given above for marination.
  • For  marination it will take 1 hour.

 STEP 2 

INGREDIENTS 

  • 3 onions
  • 1 medium size ginger

DIRECTION

  • caramelised grated ginger and sliced onions.

STEP 3

INGREDIENTS

  •  3 cups Basmati rice
  •  6 cups water
  • 1 bay leaf
  •  3 cloves
  • Salt
  • 1 tsp ghee

DIRECTION

  • Soak rice in 4 cups of water for half an hour.
  • Boil 6 cups of water, pour the soaked rice, cloves,salt,bay leaf,cloves into it.
  • Cook the rice until half done and discard the water and strain the rice .

STEP 4

Preparation of Biryani 

  • ½ cup chopped onion
  •  ½ tsp sugar
  • 1 tbsp oil
  • 1 tsp pepper powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • 8 to 9 almonds
  • ½ tsp sesame seeds
  • 1 tsp saffron soak in 1 tbsp of milk
  • 1 star flower
  • ghee
  • 1/2 cup mint leaves
  • 1/2 cup Greek yogurt
  • salt

DIRECTION

  • Soak almonds,sesame seeds in a bowl of water for 2 to 3 hours.Remove the skin of the almonds and make a fine paste.
  • Heat 1 tbsp oil,sugar,chopped onions sauté it until light brown.
  • Add almond paste. Saute it.
  • Add marinated vegetables and fry them well.
  • Add pepper powder,coriander powder,garam masala,curd and fry them well.off the gas and keep them aside.
  • The prepared masala should be thick.
  • In a pressure cooker heat 2 tbsp ghee, cinnamon stick,star anise and add half of the rice,layered cooked masala.
  •  sprinkle  half of each (fried onions,gingers.,mint leaves) and some ghee.
  • Again spread rest of remaining rice.cover the cooker lid.
  • Now on the gas and cook on high flame for 4 to 5 minutes and release the gas on running water.open the lid.
  • Now spread rest of mint leaves,onions,ginger and spread the saffron milk mixture over it.
  • Serve with prepared raita/salon

  • Slice onions and roasted fry them in oil until dark brown and discard them in a absorbent paper,keep them a side.
  • Grate ginger and roasted fry them in the same oil,discard them in a absorbent paper and keep them aside.

STEP 5

  • Soak almonds,sesame seeds in a bowl of water for 2 to 3 hours.Remove the skin of the almonds and make a fine paste.
  • Heat 1 tbsp oil,sugar,chopped onions sauté it until light brown.
  • Add almond paste. Saute it.
  • Add marinated vegetables and fry them well.
  • Add pepper powder,coriander powder,garam masala,curd and fry them well.off the gas and keep them aside.
